Expect to see the local pasta, cavatelli - usually served with a mutton ragu - on menus as a primo (the traditional Italian first course), as well as cicci ammaretati - a soup made with chickpeas, lentils and chestnuts. Some of the best-know local products include olive ammaccate (bruised olives), caciocavallo cheese, white artichokes and white figs - traditionally dried and covered in chocolate.
